Flavours are generally herbal or synthetically derived organic compounds with a flavour added particularly to foods and used for enhancing the taste or giving a specific smell and taste to the food in which they have been added to. They can also be used to prevent alternations and losses occurred during processing, packaging, storing and preparing for consumption due to variations in raw material.
Flavours vary from high complex mixtures to single chemicals.

Natural Flavouring Substances
Flavouring substances obtained from plant or animal raw materials by using proper distillation, extraction, enzymatic or microbiological processes.

Nature Identical Flavouring Substances
Flavouring substances that are obtained by synthesis or isolated through chemical processes which are chemically identical to flavouring substances naturally present in products intended for human consumption.

Artificial Flavouring Substances
Flavouring substances that are chemically synthesized in laboratories, different from natural flavouring substances and not isolated from natural products.

Reaction Flavours
Reaction flavours, also known as process flavours, are applied heat not greater than 180ºC for 15 minutes. Even though they initially have no characteristics of giving flavour but provide taste and smell as a result reaction of two substances containing amino group and reducing sugar.

Incense flavours are defined as incense extracts used to fumigate traditional foods.
